Enjoy the truffle hunters' freshly picked truffles from Parma!
Now is your chance to learn how to get the best taste experiences of the Italian delicacy TRUFFLE! During the evening, we will cook six different dishes together (two of which are desserts) - all with the exclusive and fresh truffle from Parma as a base.
Pleasant and knowledgeable Lorenzo Biacchi, read more at www.mysallitaliana.com, will guide us through the evening. He himself grew up in the food region of Parma in northern Italy and moved to Sweden as a 20-year-old. He regularly visits his home country and family, who also work with quality food in various forms. Together with Lorenzo, we will prepare a well-composed overall menu. The current recipes are taken from Italian family traditions in the region.
During the evening we offer:

- Cooking class with at least six dishes, two of which are desserts
- Guidance and support from Lorenzo throughout the process

Date, time and place
Saturday, November 19, starting at 18.00. We begin with a tasting from a ready-made tray with cheese and hams from Parma. After that, it's about cooking, eating and hanging out together until no later than 10.30 p.m.
Award
You pay SEK 1,495 for the entire package, with ingredients, cooking class, restaurant meal and socializing. The number of participants is limited to 20 people.

What is truffle?
Truffles are fungi that grow in the soil, in symbiosis with the roots of certain tree species (e.g. oak, poplar and fir). There are several types of truffles, with the tastiest being different types of white and black truffles. The season varies between September and January. The "truffle balls" vary in size - from a couple of grams in weight up to a kilo. Prices rise exponentially with size (bigger balls bring more prestige).
Price and availability depend on how much and how often it has rained. Truffles are picked with the help of a truffle dog, which the hunter trains so that it associates the scent of truffles with something playful and positive. The truffle hunter establishes a close relationship with his dog; After a few years, a hand gesture and eye contact is enough and the dog knows exactly where to look and what to do. When the dog digs in the ground and the scent of truffles rises in the atmosphere, the dog goes "crazy" and finds it difficult to stop digging. But the truffle hunter digs in the end with his hands and with a special tool so as not to damage the truffle.
In Italy, you have to obtain a special permit to be able to hunt truffles, as the balance of the species is easily disturbed if the digging and harvesting is done incorrectly.
In most cases when you find truffle products in the store (cream, oil, etc.) they contain chemical substances that mimic the taste and smell of truffles. Even in restaurants, unfortunately, chemical truffle products are often used. The truffle is a delicate and exclusive product - a fresh product - which is difficult to store over time. During the evening of November 17, we will only use fresh and genuine truffles!
